I'd just use Tara, which is the most familiar spelling to most people.
Unless it's somehow important to the story that her middle name be her grandmother's name, I'd say she doesn't need to have her middle name be in the story. Characters very rarely need middle names, and having them almost never does anything for the story except add unnecessary details.
