I really like both Cora and Seren. I agree with you that a longer middle name would sound better. Cora Seren has a bit of a choppy flow, but it still works.
How about Coralie Seren? It sounds better to me. If you used Coralie, you could always call her Cora for short.
More combos with middle names that mean "star":
Cora Citlali (SEET-lah-lee)
Other ideas:
Cora Simone - Both contain the same number of syllables, but the emphasis is on the first syllable of Cora and on the second of Simone, so it balances out.
