Aw, I think both Joseph Morris and Josephine Mary are lovely middle names.
From your boys, I'd pick Theodore Joseph Morris, because it's got the best flow, I think. While I like the other ones (especially Rowan, Arthur & Winston) it's all a bit two syllable for me.
I love your girls names! Rosemary, Lydia, Josephine and Wilhelmina are favourites. Obviously the MNS would need to be reworked for Rosemary and Josephine. And I think Wilhelmina and Josephine are a bit OTT next to each other. Lydia Josephine Mary is gorgeous though. I'd love to have that name.
