Nimue. I've never seen the Nimui spelling, either in the Arthurian legend, or well anywhere. Nimui doesn't really make sense for the way Nimue is pronunced, since the name is Welsh and the E makes a different sound from E in English. Unless you are pronouncing Nimue and Nimui differently from each other?
I have seen Nimue spelled Nimueh.
