Eunice could be YOO-ne-see I suppose. But yoo-NEES doesn't work for me - sounds as if you're rudely calling your nephew's sister. The yoo-NEE-see version is the name of a well-known girls' high school in South Africa with a good academic and sporting record;it's clearly been pronounced that way for a good many years.
