Hester would be my choice
I tend to steer clear of vowel-starting names as middle names if I envisage teasing potential and in this case I see Hester Olive as perhaps one day, if she married a Mr Thompson and changed her surname, as spelling HOT
How about:
Hester Liv
Hester Vivienne

Liv sounds too modern, I think. I generally don't like -enne names.
