If your only reason for preferring Eloise is because Violet is getting popular, only 0.2% of baby girls were named Violet last year (yes, I did just calculate that). That is, unless you're not in the US...either way, I think you should use the name you like best regardless of popularity! Sometimes names are popular for good reasons!
Also, I think it goes nicely with Henry & Sienna. I think of Sienna as a city and Violet as a flower, so the color thing didn't even cross my mind.
(btw, I AM rooting for Violet because I like it better than Eloise...haha! But both are nice choices. Good luck!)
