Could Ellis be confused with Alice? Where I live, that's possible in some accents. Which means that I'd definitely go for Gareth. I really don't like your backup boy list, though perhaps James instead of Jameson could work. If you're really keen on them, might you consider using Walter as a fn and choosing your fave for a mn?

Must Deb be Deb? Since it's a mn I suppose it doesn't matter much, but even there I'd prefer to give her the dignity of a full name. And the same goes for Eliza, so if I were you, I'd be choosing between Victoria Deborah and Elizabeth Deborah. (I was at school with an Elizabeth Deborah, known as Elise. And another school friend used to say she would name a daughter Victoria Deborah! I don't think she did, though.)
