Officially it's spelled Síne and pr'd SHEEN-uh. Accents are often left out and still pr'd the same, so just going with Sine wouldn't change that. An accented é does exist in Irish, but not often at the end of words like that, and by changing it, Síne-->Síné would no longer be the same name.Hope this helps! :-)
