Ya'aqov (Hebrew) -> Iakobos (Greek) -> Jacobus (Latin) -> Jacomus (Latin) -> James. There was a reasonable explanation of why the Romans found "m" more appealing/easier to pronounce than "b", but you'd have to search in the archives.
