I don't actually speak Polish, but I got that pronunciation from looking up Polish pronunciation lessons...I guess when it's all combined it sounds pretty different from the way the letters would be pronounced individually!
So s-i-e becomes sheh? Interesting...

Yes, "si" makes a "sh" sound.
