The last syllable is actually more like meh. It is short and not emphasised so it doesn't make the may sound.

So is it "meh" like english "ee" or is it like "e" as in "very"?
And is it AHYAH-meh or Ah-YAHMEH?

It's more like "e" in "very." And there is no stressed syllable, all three are equally emphasized.
