I googled it and found that it is the feminine form of the Hebrew name Melitz, which is derived from the word "mltz," meaning "to be sweet." According to this source this is also where Melissa is derived from, meaning "bee (the producer of sweetness)."

melitz is not only sweet - it can come from melitz yosher - man who says good about the other ones.
