I would say ersh-ey-bet, because "zs" makes "sh" in Romanian...

I've just checked, yup she was Hungarian, but don't worry, it's the same pronounciation. All the more that the borders of the countries were not as stable as today...
In fact I said Romanian because she was from Transylvania, which is now part of Romania lol

Just make sure you get the "sh" voiced. The stress is on the first syllable and the first vowel sounds almost as in "can" (it is short). The second vowel is a very open E like in "get", but a little bit like in "git". I'm not Hungarian, but I used to know a girl from Hungary called Erzsébet and that's the way she pronounced her name.
