For now I think a good hypothesis is that this is a feminization of Sarkander, the surname of Jan Sarkander, a Roman Catholic martyr who was canonized as a saint in 1995. Even though he was only "blessed" before 1995, I bet some devout Polish Catholics would have wanted to name children after him:
