Meliton means honey but...
Meltion means honey but why does it end in "-ton"? I that a meaningless affix? It does not seem like it is...

It's just a masculine suffix. Plenty of Greek names end in -on: Agathon, Ariston, Straton.

and so is true for the "t"?

No, not the "t". Perhaps this name in fact derives from melissa/melitta "bee". But looking at LSJ, many honey-related words have stems with melit- so maybe I'm missing something.

Depends on the language ...First note, that the "t" in Melit- may still be part of the stem and that Melit- actually means "honey bee".In French, the ending -on was and is used to make names feminine and to create more familiar or diminutive forms like Manon, Nanon, or Alison (from Alice). So, Meliton may be explained as a French form of Melitta.Because you did not give additional information (gender, linguistic background) this is a shot in the dark and maybe completely mistaken.

It is a Greek name according to this site.

Usually, |-ton| means "town," but (if a historical name) its true interpretation would, more likely, be determined by the language of its root, |Meli-|. |Meli-| (in this case) may not mean "honey."
