As I understand it, "name days" are celebrated on the day the Roman Catholic church designates as the festival for a saint with the name. There is no saint named Erin -- it is originally a poetic name for Ireland itself, and was not used as a person's name in Ireland until very recently -- so there wouldn't be any "name day" for Erin.I suppose if you wish you could use December 6, which was the day the Republic of Ireland received its independence from Britain in 1921.
