Elder Flower Limonade
We do not celebrate 4th of July, but the day was pleasent never the less. Together with my mother, I started the brewing process of elder flower limonade . The flowers have to "rest" together with the other ingredients for a little week before the limonade is ready.Elder flower limonade is the most tasty limonade I know of.

SelwynHave you ever tried rose water lemonade (is that what you mean by limonade? If not, mea culpa)? I know it's a Middle Eastern drink (at least Arabic), and one I find quite good if made properly.BTW, what's the recipe for elder flower lemonade? If lemonade is made from lemons, shouldnt limonade be made from limes?

WellI do not know what rose water limonade is.
What is it made from?
Rose leaves, water sugar and such?Elder flower limonade is made from elder flowers, sugar, water, lemons and citric acid.
Yet, this year we have experimented a little my mother and me with different kinds of sugar so before I give you a recipe I think I should have tasted the result this year.
Next week I will be away tending my parents house and their dog while they are on vacation. Thus I will taste the results.
I will then let you know the recipe I like the best.You see, the amount and kind of sugar can be different from recipe to recipe. The number of elder flowers per kilograms of sugar can also be regulated ( but we use to be a little haphazardly here)
and the amount of citric acid can as well be regulated per kilograms sugar and the same is true for the number of lemons.Monday or tuesday I should be able to report back to you.

SelwynIt is made with rose water which is kinda like the distillation of elder flowers that you use for your elder flower limonade, but using rose petals instead of elder flowers. It is quite populaer in Middle Eastern dishes (or so I've heard).Phyllis (aka Sidhe Uaine or Gaia Euphoria)

Here we go with the recipe for Elder Flower LemonadeHi Phyllis !As I promised I would post as soon as I had tasted the experimental recipes we tried this year. Yet, let me say that these experiments have taught both my mother and I that our original recipe is the best we have still. That rose´water sounds interesting. I have never heard of it before but I will try and see if I can come by it some time.Elder Flower LemonadeIngredients:30 large Elderflowers (or more if smaller)
25 gram citric acid
3 lemons
1 kilo sugar
1 litre boiling water
Half a teaspoonful or one teaspoonful Atamon depending on how long you plan to keep it in before drinking it.How to do:
Gather the 30 Elderflowers the same day as you begin making the elder flower lemonade since they become “dull” if left overnight after they have been cut off the tree.
Put the elder flowers into the pot.Note I
An elder flower consists of a thick centre stalk from which springs several thinner stalks upon which the actual flowers are. Cut the all the smaller stalks and thus all the flowers loose from the centre stalk and put them into a large pot, which you have a lid for. The centre stalks are not poisonous or anything it is just that cutting the flowers loose from the CertEd stalk will give you a “flower mass” which is easier to work with. That which gives the elder flower lemonade it’s elder flower taste is the flowers and not the stalks so you do not loose anything tastewise by removing the centre stalks.Note II
After the elder flowers have been put into the pot you should look for insects which also like elder flowers and which will probably by accident have found their way into your pot. In Denmark none of these insects are poisonous and it presents no danger to let them stay. Yet, I have always felt pity for them and try to remove the majority of them before going any further in the process.

I forgot to mentionThat I we use to filter it through a piece of cloth, but other ways will work equally well such as coffe filters and such. 'Tis just a little harder to handle.

Oh well, at least the traffic jams won't be so bad and they'll encounter fewer rednecks. Hope they'll still be able to bring you a souvenir T-shirt. : )Um, do people go to the seaside in Southern Jutland, or will your parents be safely tucked away somewhere inland? And here I assumed that everybody over 30 went to Greece or Majorca on holiday, and everybody younger went to Thailand...
