It's not pronounced Amy or it would be spelled Emi and would be made up of different kanji.
ai in Japanese is pronounced I as in the letter I or sky. Thus, Aimi is pronounced I-me.
There are various other kanji that can be used to make this name as well, so it depends which ones you choose for ai and mi.
