It is not from the name of the Spanish festival which is celebrated on Christmas Day. But from the Spanish festival celebrated 9 months before Christmas Day, that is the 25th of March.

Encarnacion comes from the Spanish meaning "In the flesh", or "en la carne" - as in: when Jesus was in the flesh of Mary (aka, in her womb). Diminutive form of Encarnacion is Encarnita.

The above pronunciations are incorrect. "-ción" is pronounced as only one syllable in both Latin American and Castillian Spanish.
