Removing one of the I's would make the sound totally different. In fact I think "rikka" means something else in Finnish. Double I in Finnish is like double E in English. Riikka is REEK-ka, while Rikka is RICK-a.
It's pronounced REEK-kah.
Pronounced Ree-KUH.
