I tried to look the last name Campos up, (which I will be changing my last name soon to Campos)and nothing. Where did this last name come from and what ethnic background is it?

Campos is a Castillian last name from Tierra de Campos (the land of fields (?), a place in the Spanish provinces of Leon, Valladolid and Valencia. Apparently, it was initially used by the nobility native to the region. Otherwise, as Jordan said, campo is the Spanish word for a field, or more loosely, the rural province.

Campos is a Spanish word meaning "fields". I'd assume that it originally was the name of people who lived in the countryside.Just a guess!
