The history behind this name is pretty cool but it is certainly not a name I'd give to my child. It brings to mind the words hypocrite, hippopotamus, you get the idea.

For some reason I find Sofia more appealing than Sophia.

In my opinion, Sophie makes a pretty nickname, but isn't so good as a legal name. It just has that nickname-y kind of sound. I suggest you name your child Sophia and use Sophie as a nickname.
