My Great-great-great-grandfather from Ireland had this name. It comes up now as a Portugeuse family name, but has anyone ever heard of it as a first name?

I know an Italian with surname Paredes also, very much Latinate, from paretis 'wall'. Perhaps your Irish family knew a bit of Latin, perhaps they used the Latin Paretis as a Baptismal record form of something like the Connaught Paraic version or perhaps it was after a family friend or connection to Spain, Portugal or Italy. You'd have to do the digging back to find names and incidents around the naming itself to make a good guess as to what was intended.Devon

Paredes, in Spanish, literally means "walls". It is somewhat of a common family name but I don't think that anyone that speaks Spanish would name a person, this.
