Anise (at least the plant) is pronounced "ANN-iss" though, right? I'm pretty sure... but it does look like "ah-NEES" and a lot of people probably pronounce it like that. In that regard Annes would be a more phonetic spelling. Or Anness photo image_zps50478a13.jpg

For me Anise and Annes sound near identical. That's like when I say Agnes it sounds like AG-nis. The only time -nes is ever pronounced as intended in my accent is when it's at the start of a word or name. I'm from the South. lol
