I like Eliot because it is the closest to Elias, and seems more authentic as a first name. Having said that, I find Elliot the most attractive of the other options, and know someone of that spelling. It could be argued that it is less like the word "idiot" (I always consider the teasing angle!) The double L, double T spelling is a bit much, though nice as a surname, imho.
