I don't know, but everyone does. It's not just the use of her maiden name which is weird, as I understand it, no one she knows in real life calls her Kate, she's Catherine. In formal news reports she's referred to as the Duchess of Cambridge but most reporters seem to call her Kate.

I think it is a media attempt to make her more accessible to the everyday woman/man. The Duchess of Cambridge sounds so formal to most (though I would love the title! Just teh title though, not the man). Princess Di was used because she was considered the Princess of the people, this is an attempt at re-creation.
