Violet's a common English word and not very long; Vi itself is more unusual. I don't think a nn is inevitable.
Most people won't use it if they know it annoys you/her, and the people who do will probably be doing so just to rile you up (my name is Victoria; my friends sometimes call me Vicky just to get on my nerves).
If people are determined to use a nn, you could suggest they use something else instead of Vi, like maybe: Viv, Vivi, Iole, Etta, Letty, etc.
