When I see Neo, I think of The Matrix even though I've never even seen the movie. Then I just think "new".
Neophytos is cool, and Neo is a natural way to shorten it. I like the full name-nickname combination, but I wouldn't use Neo by itself.
Neofit looks like a product name or company name for one of those step-counting watches... like "new fitness" or something. I know it's not pronounced that way but that's what it looks like to me.

Néophyte looks too much like the English word neophyte.
