The Latinized form of the name is in the database:

It says that it means "to seem well" from "ev" = good, well and "doko" = to seem but "doko" means believe, appear (in a dream), guess, hope, imagine, have an opinion etc. In a Greek site I found the etymology that seems more accurate to me: Evthokia (Ευδοκία)= To have a good opinion/belief.
