Croía - did Conor invent it?
Is there any history of Croía being used in Ireland prior to Conor McGregor using it on his daughter?

No McGregor didn't invent the name. It is rare though. I have only heard it a few times. Someone I knew in the '90s had a sister called Croía, who was born in the 1970s.

I can't find any references to this as a given name before the McGregor child, at least on short notice. It is not in my name dictionary from Ireland, and when you Google Croia "minus McGregor" you come up with places where it's on modern baby name lists, its use as a trade name, a rare Italian surname, and references to a town in Albania called Croia, the last of course being a coincidence with that place name not related at all to the Irish word.A link to a page about the rare Italian surname, which almost surely is also not related to the modern Irish given name:https://forebears.io/surnames/croia
