Sounds like an invented name to me, Sherremy. Oh well, we'll just have to invent a plausible meaning for it then! :)
How about viewing your name as a feminine variation on the name "Jeremy" (meaning "Jehovah exhalts")? Maybe somebody else here can offer a few ideas for you.
Other than that, I'm afraid you'd have to ask your father's sister exactly what she must've been thinking at the time, in order to figure out where she might have gotten the idea of that name from.
