According to them https://en.wikipedia.org/wiki/Pascoe the name originated as a "Cornish pet form of name Pascal, introduced by the Norman knights into England after the Conquest started in 1066"
According to "Names for the Cornish" by Christopher Bice - Lodenek Press 1970. The name was "Common pre 17th C."
In later centuries the form Pascoe seems to be / have been more common, though.
