Cerys Emily is lovely. You know that Cerys has a long history and is not made up and trendy, so I don't think you should let other people's lack of knowledge of this name alter your choice. I don't think it is too similar to Rhys.

I think if you both love it, you should stick to Cerys Emily. That said, of the other combos you have suggested Elsa Quinn is also lovely and would fit very well with your existing children's names.
