"One Dona Encave from Pamplona, in the second half of the 14th century". What would this name mean?

It seems to be a last name, possibly related to the English word 'enclave'. In Spanish 'en' is a preposition that most fits with the English word 'in' and 'cave' is a form of 'cavar' which is 'to dig'. The English word 'enclave' comes from French, which in turn came from a Latin word so I suspect Spanish had the same base.
Encave likely either means 'surrounded by land owned by another' where 'owned' is a loose term that may mean the person owned land that someone around him owned most of the other land, another country had most of the other land or another ethnic group/community occupied the surrounding land and this ethnic group was enclosed.
