I like
May because of the month, and it would probably be the first spelling other people would use. I believe it's also the spelling used for the name in the song Slide.
On the other hand, I think I like the E at the end better than the Y-- it just seems to make it more of a name for me, and it seems a little "snappier" (to use a word someone mentioned before, I think). So, if I had to choose, I'd choose
Mae.

Mae doesn't need to be a NN; it works perfectly well on its own.
Maeve NN
Mae is fine, though; actually, with
Maeve being my current favorite girls' name, it's something I'd consider for a future hypothetical daughter. But it would be more of an affectionate NN rather than something she'd get called all the time rather than
Maeve; I think
Maeve's pretty short itself, so having a "permanent" NN for
Maeve seems somewhat pointless to me. Not to mention I love the V sound in
Maeve, so I wouldn't want to get rid of it completely. So, if you like both names and want to kill two birds with one stone, go ahead and do it, but ultimately,
Mae makes a fine full name. :-D
