Celeste is definitely my favorite for both! It's pretty and not very popular. Even if you use the popular name, Sophia, or you use Victoria and then it becomes popular, and Grace is very simple and sometimes fillery, Celeste will make the name interesting no matter what.

Shae is too rhymey with Grace IMO. But "Shae Grace" is a better order than "Grace Shae".
Nicole is goood, butt can be a little fillery. It's probably my second choice here though.
Victoria Grace Nicole / Victoria Nicole Grace, Sophia Nicole Grace / Sophia Grace Nicole (I think it depends on the last name here.)
Louise... my opinions on Louise are very similar to Nicole.
