I really like Huckleberry, but I've never gotten to the point where I love it, and I'm not sure if I'd have the guts to use it. It does sound nice, though, and it has a wonderful literary association that will remain timeless. I wouldn't go with Holden Huckleberry, but that has nothing to do with the fact that Holden is unique. It's because it's waaaaaay to book-y (Holden Caulfield and Huckleberry Finn). I really dislike the name Gavin; it's very trendy. It does sound okay with Huckleberry, but I think I'd pair Huckleberry with a more common name like William or Rowan.
