If Caitlin and its spelling variations hadn't become so popular, I would choose Caitlin, because Catherine and Katherine have always been popular, and then there was Cathleen and Kathleen, and most Cathleens and Kathleens were Cathys or Kathys, and you never knew if they were Catherine/Katherine or Cathleen/Kathleen anyway.
But Caitlin and its spelling variations did become popular, so at this point I would choose Catherine, since I prefer it to Caitlin.
My favorite spellings are Caitlin and Katherine. IRL, if I weren't doing this at your behest, I would always choose Katherine.
