Because the Romans mistakenly thought Katharine came from "katharos", they used it with that meaning. Meanings can (truly) change even through mistakes. So I don't think it's incorrect to say Katharine means "pure".. it did to the Romans! I think it just depends on how far back in the name's history you want to go.
