I agree, Norah Evelyn does sound better than Nora Eve. The E sound at the beginning of Evelyn is a short E sound rather than the long E at the beginning of Eve, so that does make the combo flow better, though still not as well as Norah / Nora would flow with a middle name beginning with a consonant.
I like Norah more than I like Annora. Norah Evelyn is okay, but I do think a middle name starting with a consonant would be better.
