My Irish mother pronounces Mavourneen as "mah-VOOR-neen." She's from western County Cork, in the extreme South. The area has its own distinctive accent, so I'm not sure if this pronunciation carries throughout Ireland. But it makes perfect sense to me given the spelling.
Montserrat is Spanish. I would say it as "mohn-sehr-AHT," but I'm not an expert. I do know that the first "t" is silent.

Around here (I'm in Texas), Montserrat is like 'monster-ROT' but without the T in 'monster.' I've also seen it spelled with the first T omitted.
In France, Montserrat is often pronounced "Mawnt-Sehr-aht" That may be a really bad example of pronunciation though.
Spanishspeakers say [mont - seh - RAT (yes, like the animal)]. "Mont" is not pronounced [mount]. About origin and meaning, I'm sure Lumia can give better explanations.
