First note, that the "t" in Melit- may still be part of the stem and that Melit- actually means "honey bee".
In French, the ending -on was and is used to make names feminine and to create more familiar or diminutive forms like Manon, Nanon, or Alison (from Alice).
So, Meliton may be explained as a French form of Melitta.
Because you did not give additional information (gender, linguistic background) this is a shot in the dark and maybe completely mistaken.
