Sourmelina

The only other use of the name I could find is in Nikos Kazantzakis's "Report to Greco". I doubt he made it up but there's no etymology or any other mention of Sourmelina except for an Airbnb listing claiming that it's also the name of a character in another Nikos Kazantzakis book that I'm pretty sure was only referred to as "the widow".
I also searched for Surmela and couldn't find anything.

I think the name might have been created for the book, as when I Googled the name, pretty much every result had to do with the book you mentioned.On the other hand, Melina is a real Greek name.

Not knowing the first thing about the book, I'd assume it was a pun on semolina.
