I'd probably say EE-rik for Eirik. I don't like that spelling, I think's kind of stilted visually, adding the i to the first part makes it seem uneven which would bother me. That said I have a brother Aric prn just like Eric or Erik and that's probably much stranger and more difficult to recognize.
