I would pronounce it e vel uh just because I have a cousin named Evan and another named Everly so I really need something that the pronunciation doesn't start with Ev so that there's not another person in the family with the nickname Ev. Eh vel uh (the Ev pronunciation) sounds a little odd but is alright too.
