The reason that the name sometimes does not have the final s is that this is only used in the subject case in Greek and therefore tends to be regarded as tacked on. This is why Greek versions of Hebrew names have s's (or, rather, sigmas) at the end (Judah/Judas, Hananiah/Ananias, etc.)

Stavros is a really strong name but my stepdad's name is Stavro (with no s at the end) and I think this is a much better way to say it.
