If my character has Gray hair could i use the name Gray for them or would it be too much

Personally, I would recommend sticking to Gray as a surname for the character, however, names like Silver or Gray would totally work in some genres! Hope this helps a bit. :)

What if it was for a real person who is changing their name and can't find another name like they is it to weird

This would be less strange, but as for a story, it comes off as very corny, especially if they were born with gray hair. Perhaps give them a name that means Gray, or a similar-sounding short and androgynous name.

Well, most people end up with gray hair no matter what their last or first name is.
But in a story, it seems a bit silly to do that, especially if you make a point of introducing them and then saying about the gray hair. It's as hokey as introducing a character and mentioning that her name is Harper and she plays the harp.
