Personally, I don't think it's an improvement but it's not an awful way of spelling it. It doesn't look too strange.
Only if you are pairing it with a name that also uses an 'f' - particularly 'f' instead of 'ph.' Or a 'v.' E.g. Stefanie Faraday, Stefanie Frances / Francis, *Fern* Stefanie...

Hmm, I actually do like Stefanie better than Stephanie, but only slightly because it seems to make the name a little simpler and straightforward.
My husband is in love with this name so I tried out all the variations in an effort to like it (Stefanie, Stephanie, Steffany, Stephani, etc).
In all cases, the spelling looked just fine but the sound put me off.
I like the letter f, so I would say, yeah, Stefanie is an improvement to me.

I would think not think differently about spelling alterations or variations. I would think these to be the preference of the name giver or bearer.
