I think Gabriel is a nice name whether it's shortened or not, if you like it I'd go for it!
And on the high school friend thing, I guess it depends on the person and maybe the level of contact your husband still has with them? I don't think that there's anything wrong with using friends siblings names especially names that are reasonably well used (e.g. Samuel) which I doubt the friend would think "They copied my family names", more like it would come across as a coincidence.
Then again it's up to you. By the way I think Samuel and Tabitha are really nice names
